Eggy breakfast muffins

With January done how do feel about the goals that you set? Have you smashed them? Or did you miss the target?

If you did hit everything that you expected, we’ll done! What will you do next? Continue with the new habits you’ve developed? Switch goals to another area of your life? Or heaven forbid return to how you were?

If you didn’t complete what you wanted, missed your targets or failed at a new year resolution that’s ok. You still have the rest of the year. I never thing resolutions should be a binary win/lose system. You have to work at new habits repeatedly before they stick. So ready yourself again and give it another go.

For breakfasts this week we cooked a batch of eggy muffins to store in the fridge and grab and go as and when we needed. It takes the decision making out of meals leaving you to get on with the day. Give them a go:

Eggy breakfast Muffins

(Makes 10 muffins)

  • 8 small to medium eggs

  • 2 medium courgettes grated

  • Quarter chorizo sausage chopped (optional or ham or bacon or salmon)

  • 4 spring onions finely sliced

  • Handful of grated cheddar / mozerella

Pre heat the oven to 180C fan or 200C

Mixy mixy all ingredients together in a bowl.
Pour into greased muffin tins and place in the oven for 20 minutes or until golden on top.

Serve 2 with spinach and cherry tomatoes and a dash of hot chilli sauce on top too to jazz them up even more.
